‘Evening!
Last week, the dude (aka the boyfriend) and I checked out a great little Italian restaurant in our neighborhood called Carino. It’s the small, hole-in-the-wall type of place you would assume at first glance is a family run, BYO with amazing dishes and a warm atmosphere. ..and it did not disappoint. I wish I had more pictures (or any, for that matter) to document the evening. Sorry about that! We did however bring our leftovers home, which I made into a wonderful salad the next day. Check it out:

This would be greens, grape tomatoes, and grilled zucchini and yellow squash (grill pans are a New Yorker’s lifesaver) topped with my red snapper leftovers and the dude’s seafood risotto (calamari rings and various other clams and shellfish right on the salad, and a little risotto on the side). I also had a cup of skim on the side- gotta get those three serving of dairy!

I really do love almost all seafood, but I gotta admit, I’m not the biggest fan of having it cooked into my pasta/risotto or even soups/chowders. It just gets to be too fishy, even for me.
